Apricot cake: a genuine and simple recipe!

INGREDIENTS

1 egg

60g (1/4 cup) sugar

1 lemon 60ml (1/4 cup) sunflower oil

100ml (1/2 cup) milk

180g (1 1/2 cup) flour

8g (1 3/4 tsp) baking powder

6 apricots

Powdered sugar

METHOD



In a bowl add the egg, sugar, and whisk. Add the lemon zest and juice from one lemon and whisk again. Add the oil, milk and whisk again.

Add the flour and sifted baking powder and combine them all together well. Cut the apricots in halves.In a pan with a baking sheet add the mixture and the apricots on top.

Bake at 356°F/180°C for 25 minutes and decorate with powdered sugar.
