MARGARITA CHICKEN RECIPE

2 thin chicken breast filets (or one breast filet cut).
1 1/2 cups Margarita Mix
4 tbsp. lime juice (split into equal parts)
Salt and pepper to taste
1 tsp. Garlic powder
1 Packet Knorr Spanish Rice
1 Can Black Beans
1 tbsp. vegetable oil

*We prepped both the black beans and the Spanish rice beforehand inside. The rice was prepared per the instructions on the packet.

Place the chicken cutlets in a plastic bag along with the margarita mix, 2 tbsp. lime juice, approx. 1 tsp. of salt and pepper, and the garlic powder. When the chicken is resting, be sure all of the chicken is covered in the mix. Let sit 1-2 hours.

Over medium/low heat, place oil on the griddle surface. Once to temp, place the chicken o nthe griddle. Cook on the first side approximately 2-3 minutes, and then turn and cook on the second side. After 2 minutes, pour 2 tbsp. lime juice and lightly salt and pepper before flipping. Continue cooking and flipping one minute per side until internal temperature reaches 165 degrees. Pull from the griddle and serve with the black beans and Spanish rice. Enjoy!
