清蒸東星斑
材料:
東星斑1條(約1斤半)
蔥2條
芫荽2棵
乾蔥頭2粒
辣椒仔2隻
處理:
1. 魚,打鱗,除去內臟,清水洗乾淨,擎乾水。
2. 放一雙筷子在碟上,放上蔥段,再放魚。
3. 芫荽,清水洗淨,切段。
蔥,切絲。
薑,去皮,切絲。
辣椒仔,打直1開2,去籽。
烹調:
1. 大火煲滾1鑊水。
2. 大火蒸魚15分鐘。
3. 另一邊鑊,大火燒熱油1茶匙。
4. 爆香乾蔥頭及芫荽頭。
5. 聞到香味,加入生抽30毫升、清水30毫升,及1粒小冰糖至溶解,備用。
6. 移走碟上的筷子及蔥段,倒去水分。
7. 鋪上薑、蔥、芫荽及辣椒,淋上生抽,灒滾油。
8. 完成,可享用。
Steam leopard coral grouper
Ingredients:
Leopard coral grouper 1 No. (About 1.5 catty)
Green onion 2 Nos.
Coriander 2 Nos.
Shallots 2 Nos.
Chili 2 Nos.
Preparation:
1. The fish, get it scaled. Remove intestines. Rinse thoroughly. Drain.
2. Put a pair of chopsticks on plate. Put green onion, then put fish on top.
3. Coriander, rinse with tap water. Cut in lengths.
Green onion, get it shredded.
Ginger, get it peeled and shredded.
Chili, divide it into 2 shares. Remove seeds.
Steps:
1. Heat up a wok of water at high flame.
2. Steam the fish at high flame for 15 minutes.
3. On the other side, heat up oil 1 tsp at high flame in wok.
4. Fry shallots and coriander root well.
5. Once you feel the smell, add in light soya sauce 30ml, water 30ml and a small cube of rock sugar until it melted. Put aside first.
6. Take away the chopsticks and green onion on plate. Pour away water.
7. Put ginger, green onion, coriander and chili. Pour light soya sauce and hot oil on top of fish.
8. Complete. Serve.
